Pasta Fritata
 
 
4 oz. thin spaghetti (cooked)  
1 oz. fresh grated Parmesan or Romano cheese
1 egg  
1/2-teaspoon fresh basil (chopped)
1-teaspoon olive oil  
salt and pepper to taste
 
In a bowl large enough to hold the pasta, lightly beat the egg with the basil, salt, pepper, and 1/2 the cheese.  Mix in the pasta, until thoroughly coated with the egg mixture, On the top of the stove, place the olive oil in a hot pan or skillet that is oven proof, and pour in the egg and pasta mixture.  Cook only on one side for 3 minutes.  Sprinkle the remaining grated cheese over the top, and place in a 350 degree oven for 5 minutes, or until the top is well browned.  Serve with a garlic toast and a salad as a lunch for one, or split each fritata as an appetizer for two.
