Pasta with Peas
 
 
2 teaspoons olive oil  
2 cloves garlic (peeled and crushed)
1/2 cup finely chopped onion
4 fresh plum tomatoes (chunked)
1/4-cup dry white wine  
1/2 cup freshly chopped basil
1 package frozen peas  
Salt and pepper to taste
12 oz. pasta (cooked)
 
In a heavy pan or skillet, sauté the onion and garlic in the olive oil until the onions begin to brown.  Deglaze the pan with the white wine, and allow to reduce to at least half its volume.  Add the tomatoes and basil.  Allow to simmer, uncovered, for 15 minutes before adding the salt, pepper and frozen peas.  Allow the mixture to continue to simmer until the peas are thawed and cooked through.  Pour over hot pasta and serve as a main pasta dish or as a side dish to a meat course.
