Biscotti AL`Anaci (Anise Biscuits)
 
 
3 eggs  
3/4 cup of sugar
1 1/4 cups of flour
1 teaspoon of anise extract
 
Place eggs and sugar in a bowl and beat for 2 to 3 minutes.  Slowly add the flour, in about three batches.  Before adding the last of the flour, add the anise extract, and blend thoroughly.  Lightly grease and flour two 4 inch wide loaf pans.  Split the batter between the two pans and spread evenly, to a depth of 1 1/2 inches.  Bake at 375 degrees for 20 minutes, or until the loaves test as done in the center.  Cool, remove from pans, and cut each loaf into slices 1 inch thick.  Place the slices on a greased cookie sheet and brown by baking the biscuits at 375 degrees for 5 minutes per side.  Serve plain or frost with a simple white sugar icing.
 
VARIATIONS: (1) Substitute lemon extract for the anise extract, and add 1/2 cup of dried fruit. (2) Substitute almond extract, and add 1/2 cup of slivered, blanched almonds.
